The Don Cosimo wine project originates from vineyards around Corleone, Sicily. The Cataratto grape maintains its natural acidity even when is close to maturity, not developing too much sugar contents, unlike other international grapes in the Sicilian hot climate. Its high acidity makes the wine fresh and light, with aromas of white flowers and a taste of apple and an aftertaste of sour almond.
