The wine is heavily scented with black cherry, ripe strawberry, pomegranate, fresh earth and sandalwood. Flavors are bright and firm and the palate’s deft balance insures the wine will pair well with white meats, seafood, and spicier or heartier fare. The Burgundian-style winemaking here included three days of cold-soak after de-stemming and light crushing to ensure whole berries in the fermenter; gentle irrigation of the cap 2x/day with intermittent punchdowns; extended maceration; immediate racking to French oak, predominantly Francois Freres, for malolactic and 22 months aging in barrel with minimal rackings. No fining was employed.
